Piparkakkutikkarit

Pikkujouluja varten halusin jotain erilaista, mutta kuitenkin perinteistä. Kakkutikkaribuumi ei ole enää ylimmillään, mutta naposteluhenkisiin illanistujaisiin ne sopivat edelleen mainiosti. Jouluinen maku syntyy maustetusta kakkupohjasta, piparkakuista ja appelsiinin makuisesta tuorejuustosta. Pienellä vaivannäöllä tikkareista saa (ainakin jossain määrin) lahjapaketin näköisiä. Kakkupohja:

Pohja on tehty kääretorttupohjan ohjeella, ideana siis yhtä suuret määrät munia, sokeria ja jauhoja. Kananmunat kannattaa rikkoa lasiin ja mitata sokeria ja jauhoja toiseen lasin saman verran. Tästä määrästä tuli 24cm irtopohjavuokaan sopiva kakkupohja.

3 kananmunaa
noin 1,5dl sokeria (esim tummaa muscovadoa ja kidesokeria)
noin 0,75dl vehnäjauhoja
noin 0,75dl perunajauhoja
1tl kanelia (Ceylon)
0,5tl kardemummaa
ripaus inkivääriä ja neilikkaa / maun mukaan

Munat ja sokerit vaahdotetaan kuohkeaksi, paksuksi vaahdoksi. Jauhot ja mausteet sekoitetaan keskenään ja sihdataan muna-sokerivaahtoon. Jauhot kannattaa käännellä vaahtoon metallilusikan avulla, jotta kuohkeus säilyy mahdollisimman hyvin. Kakkupohjaa paistetaan 175-asteisen uunin alatasolla 15-20 minuuttia, kunnes kakku on kypsä. Anna jäähtyä.

5-10 piparkakkua
noin 100g appelsiinin makuista tuorejuustoa
200g valkosuklaata
koristelugeelejä

Kakkupohja ja piparit murustellaan kulhoon, lisätään tuorejuusto ja vatkataan kunnes seos alkaa tarttua yhteen. Massasta voi muovailla pallojakin, mutta itse tein siitä kuutioita. Jotta kuorruttaminen on helpompaa, kannattaa kuutioita pitää hetki pakastimessa.

Sulata suklaa varovasti mikrossa tai vesihauteessa. Itse käytin isoa kahvimukia, jotta palojen dippaus oli helpompaa. Kuutiot (tai pallot) upotetaan suklaaseen ja kun suklaata on kuution jokaisella sivulla, nostetaan pala haarukan tai lusikan avulla. Tikkaritikku kannattaa myös dipata suklaaseen ennen kakkuun painamista, jotta tikku tarttuu paremmin kiinni. Kun kaikki palat on kuorrutettu ja tikutettu, anna jähmettyä jääkaapissa. Ennen tarjoilua koristelugeeleillä pursotetaan "lahjanauhat" suklaan pintaan. Koristeena voi käyttää myös nonparelleja tai suklaarouhetta, mutta ne kannattaa lisätä ennen kuin suklaa on täysin kovettunut.

Gingerbread cake pops

I had a little Christmas party with work colleagues last weekend and wanted to make something different but still traditional. Cake pops may not be the hottest thing anymore, but for a fingerfood sort of get-together they're still perfect. Spicy cake, gingerbread crumbs and orange flavoured cream cheese create this cristmassy combo. With a bit of effort you can make the cake pops into tiny gifts. Even I managed.

The cake is made with equal parts of eggs, sugar and flour. I recommend to break the eggs into one glass and measure same amount of sugar and flour to another glass. This recipe makes enough for one 24cm round cake tin.

3 eggs
about 1,5dl sugar (eg. dark muscovado and caster)
about 0,75dl flour
about 0,75dl potato flour (farina)
1 teaspoon cinnamon (Ceylon)
0,5 teaspoon cardamom
Pinch of ginger and clove / to taste

Preheat oven to 175*. Whisk the eggs and sugars until very light and fluffy. Mix together the flours and spices and add through a sieve into the egg mixture. Fold the dry ingredients carefully with a metal spoon until smooth. Bake the cake for 15-20 minutes in the lower part of the oven until cooked. Let the cake cool down on a wire rack.

5-10 gingerbread cookies
about 100g orange flavoured cream cheese
200g white chocolate
decorating gels

Break the cake and gingerbread into crumbs and mix with cream cheese until the mixture starts to stick together. Press and shape the cake into cubes (or balls) and let set and cool in a freezer. This will help the chocolate set faster.

Melt the chocolate carefully in the microwave or bain-marie. I used a big coffee mug so that the cubes were easier to dip in the chocolate. Drop the cubes / balls one by one into the chocolate and once completely covered use a fork or spoon to lift the cubes out of the chocolate. Dip the cake pop sticks in the chocolate as well before pressing them into the cake cubes and let set in the fridge. Before serving pipe tiny bows and ribbons with decorating gel.
