Suklaafudge

Tämä resepti on kuulunut erityisesti joulunaikaan jo pitkään, varsinkin ruokalahjojen muodossa. Resepti on Nigellan, ja siinä on käytetty kuorittuja pistaasipähkinöitä, mutta mausteeksi sopivat myös muut pähkinät, keksit, karkit tai vaikka kuivatut hedelmät. Suolaa ei kannata lisätä suklaaseokseen, jos käyttää suolattuja pähkinöitä. Täytteiden määrän voit tietenkin päättää itse, alla alkuperäinen resepti. Massan voi myös jakaa osiin ja tehdä kerralla useampaa sorttia. Herkku ei ole virallisesti fudgea, sillä sokeria ei tarvitse keittää ja ruskistaa, mutta mielestäni nopeus, helppous ja herkullinen maku ajaa virallisuuksien ohi mennen tullen.

350g tummaa suklaata rouhittuna
1 prk (397g) kondensoitua maitoa
30g voita
ripaus suolaa
150g pistaaseja osittain rouhittuna

Suklaarouhe, kondensoitu maito, voi ja suola sulatetaan kattilassa miedolla lämmöllä koko ajan sekoittaen. Lisätään pähkinät tai muut mausteet, sekoitetaan hyvin ja kaadetaan massa foliovuokaan (n 23cm). Tasoitetaan pinta, ja siirretään jääkaappiin tai pakastimeen jähmettymään. Jähmettynyt fudge paloitellaan, hatusta palojen koosta riippuen tästä määrästä saa noin 50-64 pientä palaa. Fudge kannattaa säilyttää pakastimessa, jolloin sen rakenne on hieman rakeinen ja enemmän "fudgemainen". Paloja ei tarvitse sulattaa, vaan herkkua voi napsia suoraan pakkasesta. Pakastin tosin saattaa hieman lämmetä, jos ovi käy kovin tiuhaan...

Chocolate fudge

This recipe is Nigella's and it's been a part of my Christmas for many years. These little pieces of rich fudge make great gifts for friends and family (but also for yourself, the truth be told). It's a bit of a cheat's version since there's no cooking and caramelizing the sugar, but all is fair in baking if the result is gorgeously delicious, right? The original recipe has pistachios in it but all sorts of nuts, as well as biscuits, marshmallows and dried fruit work just as well. Mix and match your own favourite combination. If you use salted nuts, don't add any salt to the chocolate mixture.

350g dark chocolate, chopped
1 jar (397g) condensed milk
30g butter
pinch of salt
150g pistachios, partly chopped

Melt the chocolate, condensed milk, butter and salt in a saucepan. Add the pistachios and fold until well combined. Pour the mixture into a foil tin (23cm), smooth the top and move to fridge or freezer. Let set completely and cut into pieces. Depending on the wanted size of the pieces, this amount will make about 50-64 pieces. If you store the fudge in the freezer, the texture will get a bit grainy and more "fudgy". Best part is that there's no need to thaw the fudge, you can eat it straight from the freezer. However, the freezer itself might get a little warm, if the door keeps opening again and again and again...
